Taking center stage are the delicately sweet “spiny lobster from Kamae” and the exquisitely marbled “Oita Wagyu,” presented at the peak of their flavor. Seasonal ingredients, available only at this time of year are elevated into refined creations by the chef’s artistry and imagination.
