The sake rice, Omachi is cultivated in the rice field that stretches in front of the brewery. The pure and crystalline brewing water is drawn from 150 meters underground that has journeyed for years through the volcanic rock layers of Yabakei, divided by the watershed of Mount Hiko. This water is first guided into the fields to nurture the rice, and later drawn again to brew the sake.
It is this sacred “Circulation of Water” that forms the very narrative dwelling within each bottle.
Brewing is entrusted to a brewery, Inoue Shuzo of Hita, Oita with over 200 years of history. In steadfast dialogue with nature, the brewery cultivates its own rice and remains devoted to winter brewing. Through slow, low-temperature fermentation, they gently draw forth its inherent elegance: its delicate aroma, profound and layered umami. Hand-pressed to preserve clarity and character which reveals pristine transparency and lingering depth for which Omachi is revered.
The team of ANA InterContinental Beppu Resort & Spa devotedly visited the brewery, standing in the field feeling the same wind and tracing the circulation of water. Through shared words and seasons, the hopes entrusted to this sake were patiently fermented alongside them.
The city of Beppu, a land shaped by water’s long journey where forest-embraced springs emerge after years beneath the earth as healing onsen. Here as well, the generous circulation of water comforts, nourishes and sustains life. The hotel’s philosophy, “Beyond the Forest,” expresses a world that unfolds past the trees – a place where nature and humanity exist in harmony and limitless possibility awaits. This vision resonates deeply with the story carried within this sake, giving rise to our collaborative project.
